Brighter days have arrived, and tastes are turning to lighter dishes and seasonal ingredients – which the brand-new menu from Mexican-inspired restaurant Wahaca has in abundance. Created using the freshest and most sustainable produce available from brilliant British suppliers, it’s designed especially to bring some beaming rays of Mexican sunshine to summertime across all Wahaca’s restaurants in the UK. We’re certainly big fans at City Life (we love the cauliflower bites!).

It’s a nutritious, versatile staple of Mexican dining, and Wahaca is celebrating the culinary credentials of the cactus with its new Griddled Cactus & Courgette Tacos (£6.95). Roast courgettes and griddled cactus are tossed with fresh lime, a hint of chilli and topped with fresh cheese and crispy corn strips. These new tacos are tangy, tasty and succulent in every way.

Originating from Sinaloa in the northwest of Mexico, aguachile is a seafood dish similar to ceviche. With zingy, summery freshness in every bite, Wahaca’s Prawn Aguachile (£8.95) brings to the table prawns marinated in habanero chillies and fresh lime and served with avocado, salsa macha and crisp tostadas.

For a larger plate that’s perfect for sharing with a friend, the new Hibiscus Glazed Aubergine (£15.95) is tasty, zesty and bursting with umami flavour. Wedges of aubergine are roasted in a delicious hibiscus salsa until tender and slightly charred, and then served with dressed quinoa, avocado cream and homemade, nutty salsa macha. A vegetarian showstopper that’s not to be missed!

Let the sunshine in…
And last but certainly not least, Wahaca’s new Sunshine Bowls (from £13.50) are fresh, fabulous and packed with summer goodness. The mouthwatering flavours in these wholesome bowls comes from nearly 30 different plant varieties including baby spinach, avocado, sauteed corn, Mexican-style ‘chiltatis’, pickled cabbage, quinoa, black beans and esquites. They’re served with coconut-lime dressing and a crisp tostada plus your choice of free range chicken, ‘Halloumi al pastor’ or garlic sweet potato. Just the ticket for a nourishing park picnic or al-desko lunch if you’re not dining in!

About Wahaca…
Wahaca was born in 2007 from a love of fresh and authentic Mexican food. First inspired by Thomasina Miers’ travels to the country and her stint living in Mexico City, she and co-founder Mark Selby later set about bringing to life their own vision back home with the restaurant group now serving its menu of delicious dishes, reflecting the vibrant flavours of contemporary Mexican gastronomy, in 14 locations throughout the UK.

Wahaca can be found in Edinburgh, Cardiff and Brighton as well as across the London, having been named by Londoners as their favourite restaurant (YouGov, 2019). Signature plates include its guacamole, freshly prepared in each restaurant every day with ripe Hass avocados and fresh lime juice and the classic pork pibil tacos, made with free range British pork.

In 2016, Wahaca was the first UK restaurant to be certified as carbon neutral, and in keeping with its passion for sustainability, the 200+ ingredients prepared freshly in its kitchens every day are sourced as locally as possible. Beef is regenerative, chicken and pork are free-range, and fish is of the highest sustainability accreditation (MSC certification). Each restaurant is designed to the highest sustainability levels and in 2024 Wahaca was named the UK’s most sustainable restaurant group following an in-depth study by Which? Magazine. Over 50% of Wahaca’s menu is meat-free, proving that it’s possible to have a balanced, yet truly tasty, sustainable meal.
